Antonia de Mendonça de Vasconcellos
Can anyone tell me anything about this lady. She lived in about 1680 and is listed at "dama do paço"

I can´t find any information at all but I would also be grateful if someone could tell me exactly what "dama de Paço) meant.

Thank you, I thought it did. I suppose this means she was from a family with some connection to the court of the time.
I wonder which Queen she waited on. I find it strange that there is no other information about her family. I see that there are still members of the Mendonça de Vasconcellos in Madeira and wonder if she had some connection to them.

It is hard to say what Queen she Wainted for, because in geneall.net it does not appear any date until her grand-grand daughter, Jerónima Genoveva de Tovar Noronha that was born in 1700.
But with the date of her grand-grand daughter's born, we can calculate that's possible with two Queens: Queen D. Luísa de Gusmão wife of King D. João IV or Queen D. Maria Francisca de Nemours wife of King D. Afonso V. Earlier I think that is impossible, because the court was in Madrid (just a few portuguese ladies-in-waiting went to Madrid).
But in the court the Damas do Paço not only waited on queens, but infantas (princess) or royal family members.
I'm not a professional just a amateur so I can not say much more than it.
